Sofitel Fiji Resort & Spa, takes immense pleasure in introducing the culinary skills of chef Jason Saxby as he takes over the V restaurant kitchen to work with team Sofitel in late September.
In 2011 whilst working at three Hatted restaurant ‘Quay’, he picked up the SMH Josephine Pignolet Young Chef of the Year Award. With this prize money Jason moved to New York to work for Thomas Keller three Michelin starred ‘Per Se’.He then spent three months travelling and eating through Italy before settling in London where he lived for two years working at the likes of two Michelin starred ‘The Ledbury’ and one Michelin starred ‘Pollen Street Social’.
Upon returning to Australia he worked at the Bridge Room before opening Osteria di Russo & Russo in Enmore. Here he headed a successful 3 ½ year stint that won him many awards. Jason is now running the kitchen as head chef of two Hatted restaurant Pilu at Freshwater on Sydney Northern Beaches, which is arguably Australia’s best Italian restaurant. Join us for three dinner services to remember with a scrumptious six course degustation menu which will be complemented by an outstanding selection of wines from Akarua Winery, Central Otago, New Zealand.
